This Cheese Stands Alone

Cheese. Who doesn't like cheese? COMMUNISTS and WEIRDOES! Actually, I bet Communists (insert Wisconsin joke here) even like cheese. So that just leaves weirdoes.

I love cheese. Not all cheese. But a lot of different cheeses. So last year I wasn't afraid to try an unusual cheese at the farmers market:

Cheese that doesn't melt.

It's a Juustalepia from Brunkow Cheese of Wisconsin. A cheese that you can nuke or pan fry, and it will soften, but not become liquid.

This was a plain one we had a few weeks ago. I fried it up in the pan, getting a nice char on the outside.

The cheese has a wonderful, buttery and nutty flavor. Speaking of flavors, they do have multiple flavor of this stuff. We've tried the bacon and the garlic ones. The garlic one is the best of all. I plan on picking some up at the farmer's market on Thursday.

And stocking up before the farmer's market season ends.

Depends on my mood.

Mozzarella cheese sticks are the go-to appetizer, but only from certain restaurants. There is such a thing as a bad mozzarella stick.

If we're talking sliced cheese, nothing better than a great aged swiss.

Fondue should be sharp cheddar with some garlic, dried mustard, worcestershire sauce, cracked black pepper, and a bit of beer.

Decadent, once in a while treat: Saganaki - fontinella cheese, dipped very lightly in egg, dipped lightly in flour, fried in a bit of butter, doused with a great brandy, and set aflame.

And the go-to, don't want to eat dinner, kids already in bed snack: whole, oven-roasted in olive oil feet of garlic and sliced, 6-month-aged asiago atop a rosemary and olive oil Triscuit.

Not that I like cheese or anything.

I have not tried a whole lot of different types, but I like Tillemook Sharp Cheddar

Provolone is my absolute favorite but I also love Muenster. I hate, hate, HATE American cheese. Not a big fan of cheddar either.

Smoked Gouda gets my vote. I also enjoy a little Dill Havarti upon occasion.

I would perish without cheese. Have you ever noticed the cheese cubes in the famous beans that Laura's step-mom makes for the annual party? It also does not melt. I used to know what it was called but I've forgotten.
